A Keto- Friendly Puran Poli Recipe That Will Leave You Drooling
Gudi Padwa, a spring time festival that marks the traditional new year for Maharashtrians. On this day, celebrations are incomplete without lots of Maharashtrian delicacies and sweets. One of the most popular dish made on this day is Puran Poli. With the festival right around the corner, we share a Keto Puran Poli recipe that makes for the perfect sugar free dish for all those who are counting their calorie intake.

Ingredients
For the dough:- Almond Flour -1/2 cup
- Desiccated coconut – ¼ cup
- Psyllium Husk – 2 tbsp
- Salt – ½ tsp
- Oil – 1 tbsp
For the stuffing:
- Yellow Capsicum, finely chopped – 150 gms.
- Almond Flour – 1/2 cup
- Cardamom powder – 1 tsp
Ghee 1 tsp - 5 Measured Spoons of Sugar Free Green Powder
(Measuring Spoon available inside every pack of Sugar Free Green Powder. 1 measured spoon of Sugar Free gives the same level of sweetness as 1 tsp of Sugar!)
For the making of Puran Polis:
- A Roll of Parchment Paper
Cooking tips
- Brush some ghee over hot Puran Polis before serving, for some added taste.
- Cook all the Puran Polis and refrigerate, you can warm them whenever required.
- The roti or tortilla can be head without the stuffing with gravies too.

Method
For The Dough- In a big mixing bowl, add all the ingredients and give it a good mix.
- Add some water and knead the dough.
- Don’t make the dough too hard. Cover and keep aside.
For The Stuffing
- Heat a non-stick pan and add ghee to it.
- Then add the finely chopped capsicum and sauté it.
- Add salt and sauté
- Cover and cook for 5 minutes.
- After 5 minutes, add almond flour
- Sauté for 2-3 minutes and add cardamom powder.
- Transfer the mixture into a mixer jar and churn it.
- Take the mixture out in a bowl and let it cool. Then add Sugar Free Green Powder (Made of 100% natural Stevia leaves. Stevia leaves are naturally sweet which add just the perfect amount of sweetness to the recipe without adding any sugar calories), making this a zero sugar calorie recipe.
- Keep it aside.
For the final Puran Poli recipe
- Take the dough and knead it again. Divide it into 3 portions.
- Now take 2 parchment papers, grease it with oil and roll out one portion of the dough into a thin chapati using either the hand or rolling pins, in between the sheets.
- Cut it into a round shape with a cutter.
- Now place a portion of the stuffing into half of the circular dough.
- Spread it out into a semi-circle leaving edges to press.
- Now with the help of the parchment sheet cover the other half on the stuffing and press it lightly.
- Follow the same practice for all other portions.
- Now, heat a non-stick pan or tawa and brush it with ghee.
- Roast all the Puran Polis till they turn golden-brown.
